White Pebble Suites stands on the waterfront at Pollonia, Milos, and the room count is 12, in three types of four. A whole floor of it is given over to wellness, with treatment rooms for one or two people, a pale-marble hammam and a Vichy shower.

Curated by Isabella Schimid, the menu is the work of a skin therapist and makeup artist of 25 years who has opened and run salons across Australia and worked in leading salons in Los Angeles. What she has put together rests on olive oil, worked together with Mediterranean herbal tinctures and elixirs that follow remedies used in Greece for centuries.

Two product houses supply it, Olive Era and Vanessa Megan. Olive Era’s line is made with Greek organic olive oil from Crete, combined with chamomile, tea, lavender, grape seeds and aloe. Organic skincare from Vanessa Megan, an Australian house, was added in 2025; its ingredients are all natural, and its sheet masks are what guests reach for after a day in the sun.

Milos itself supplies the reasoning. Hippocrates praised the therapeutic properties of the island’s thermal springs, and the springs are still there, scattered from Lakkos to Skinopi. Some rise between rocks, some in caves, some beneath the sea, and each one carries its own minerals, water temperature and medicinal qualities. They are a remedy for skin conditions, aching muscles, arthritis and rheumatism.

What the menu holds

The Fire & Frost facial runs 60 minutes and works with pure Vitamin C, active Australian botanicals and polar temperatures, warming and cooling the skin in turn to lift it, brighten it and hold water in it. The house sets it against more invasive skin resurfacing.

The Hammam Ritual also runs 60 minutes and opens with 10 minutes in the hammam. A Body Glove exfoliation with Greek bio olive oil and pomegranate soap follows, then a scalp and hair ritual, then the Vichy shower, and it closes with a full-body hydration of bio olive oil, fig and thyme lotion.

The longest ritual on the list runs 120 minutes. It begins with a full-body scrub of olive and apricot granules, organic olive oil and chamomile extract, continues through the scalp and hair ritual, and puts you under the Vichy shower’s cascading streams before a closing hydration massage of Greek bio olive oil, pomegranate and basil oil. The Aphrodite, at 100 minutes, is the other long one: a foot exfoliation, a head and scalp ritual, an Olive Era mini facial and 60 minutes of massage.

Shorter work fills the rest of the list. There is a Hydra Bliss facial on Olive Era products, an obsidian hot stone and oil massage, a deep tissue massage, a candle massage of warm aromatic wax poured onto the skin, and 30 minutes of back, leg or foot massage taken beside the pool. Every body treatment begins with a foot scrub.

The spa opens 11:00 to 19:00 and asks guests to arrive 15 minutes early. Everyone completes a short wellness consultation form first, and the floor takes guests aged 16 and over.

The house around it

Three Greek-Australian women with backgrounds in travel, hospitality and fashion raised the house, after summers spent travelling the Greek islands settled them on Milos. They appointed KKMK Architects, Athens, to design it on a seaside plot at Pollonia, and the design team was Katerina Karagianni, Marina Karamali and Muriam Kourouvani. Every one of the 12 rooms had to open to the sea, and on a narrow seafront plot that forced a V-shaped plan, with the main pool set in the inner angle. The building was completed in June 2021, in concrete.

The suites are divided by size, orientation and amenities. The four Honeymoon Penthouse Suites sit on the upper level, run 34 to 35 square metres and have a plunge pool with jets. The four Cabana Sea View Suites surround the main pool at 27 to 32 square metres, and the four Deluxe Coastal View Suites sit on the ground floor at 26 to 32 square metres. The house admits children only over the age of 16.

Who is this for

A couple with a week on Milos, based in the port of Pollonia. The suites are pale and curved, built from polished cement, cool marble and warm wood, with pebble-shaped basins and coffee tables cut on a CNC machine, and every terrace is screened by Mediterranean planting. From the upper level the view runs over whitewashed Pollonia to the golden cliffs of Kimolos across the straits. There is a 28-metre saltwater pool, and the sea is steps from the door.
